Another great addition to our ramen noodle recipe series, Mongolian beef with ramen noodles!! Absolutely delicious and quick to the table. Also when I know my schedule is jam packed for a particular day, (more so than usual). I will do my prep of cutting the vegetables and beef the night before. Because when my gang is hungry, I can feed them in 20 minutes or so. And they love this meal!! Especially paired with the Antoniou Cabernet Sauvignon and exclusive divine fine wine!!!
Furthermore this recipe is so easy to modify to your liking and tastes. So if you are looking to cut back on beef consumption use chicken or shrimp. Often I will substitute the broccoli with finely sliced cabbage or snow peas. I just add them later so they have a light crunch to them, usually the last one minute of cooking. Indeed what you use is entirely up to you.
Mongolian Beef with Ramen Noodles Recipe
INGREDIENTS
- 3 packages of ramen noodles.
- 2 tbsp. canola or vegetable oil
- 1 lb. beef skirt or sirloin steak, sliced on the bias (against the grain)
- 2 Tablespoons of cornstarch
- 1 Tablespoon of sesame oil
- 3 cloves of garlic minced up
- 1 teaspoon of ginger minced up
- 1/2 cup of soy sauce
- 1/4 cup of lightly packed brown sugar
- 1 cup of beef or chicken broth
- 1/4 teaspoon of red pepper flakes
- 1 head broccoli separated into florets
- 1 carrot chopped into matchsticks
- 3 green onions sliced thinly
- Toasted pine nuts or sesame seeds to sprinkle on top
DIRECTIONS
- Cook ramen noodles as directed. Then drain and put aside.
- Heat oil using medium high heat in a large frying pan. Put the cornstarch and sliced beef in a baggie and shake well to coat. Sear the beef in skillet about 2 minutes per side. Remove beef and set aside.
- Reduce the heat to medium-low. The add the sesame oil to skillet and stir in garlic and ginger. Saute until fragrant about 60 to 90 seconds, then add soy sauce, brown sugar, and broth. Bring the mixture to a boil, reduce heat and simmer until the sauce is thickened, 3 to 5 minutes.
- Add the broccoli and carrots then cover the skillet with a tight-fitting lid and cook until the vegetables are crisp tender, about 5 minutes.
- Return the beef to skillet and stir until completely coated in sauce. Lastly stir in cooked ramen noodles and green onions. Sprinkle with the toasted pine nuts or sesame seeds.
