To be sure when asked to bring a dish to pass this Potluck Coleslaw Recipe is always a crowd pleaser! Also what’s great about this recipe is how easy it can be doubled or tripled depending on the crowd expected. Besides that it is so simple to prepare along with being a great time saver! And no matter the occasion do not forget to bring a bottle of fine wine. Especially the premium fine wine I get delivered to my door each and every month from Napa Valley. When in doubt on whether you should bring a white or red, gosh take one of each!!! Or bring the Tanya Pinot Grigio Lodi it goes well with any meat type.
Also this dish goes with just about any type of meat, be it chicken, pork or just good ole hamburgers and hotdogs!
Hearty Potluck Coleslaw Recipe
Because the recipe calls for uncooked ramen noodles, it makes the coleslaw a little heartier. Also the ramen renders a nutty flavor and consistency. Besides being just plain delicious, there are so many variations you can make to it. Just be creative with it!!!
Of course coleslaw is a summertime favorite, but my family loves this hearty slaw! So I make it throughout the year. Besides that I often do variations with it. When we have ham I will add a small can of crushed pineapple, yummy!
Recipe

1 bag of slaw mix

1 large apple chopped up – Granny Smith or Braeburn and Honeycrisp all work great, you need a tart/sweet hard apple

½ cup raisins or craisins

1 package Ramen Noodles (do not use the seasoning packet, save for something else) Break up into small bits. I usually just whack it a couple of times with a rolling pin while still in the package
Dressing: ½ cup of mayonnaise, ¼ cup milk it is important to add the milk just a few drops at a time to get a nice smooth consistency. Add in 1 packet of Truvia sweetener and about ½ teaspoon celery salt and pepper. Drizzle dressing over mix and combine.
Another point I would like to make is, this recipe called for a store bought slaw mix for ease of use. But if you have the time to hand chop a head of cabbage you will not believe the difference. Because freshly chopped cabbage adds an amazing crunch and texture!
Variation suggestions to Coleslaw
Granted everyone has different tastes, so make this recipe to suit you and your family. As I mentioned earlier be creative, some of the variations I use are to add sunflower seeds or pecans. Also when I use pineapple my kids loved flaked coconut in it! Makes it feel like summer! Enjoy and Bon Appetit!!
