Ingredients for pizza with a ramen noodle crust

  • 4 packages instant ramen, without the  spice packets
  • Olive oil – just enough for sautéing
  • 6 cloves garlic, minced
  • 1 teaspoon of red pepper flakes
  • ½ teaspoon oregano
  • ½ cup grated Parmesan
  • 4 eggs
  • 1 cup ricotta
  • Salt and pepper to taste
  • Butter
  • 2 cups shredded mozzarella cheese
  • Favorite pizza toppings

Directions to make ramen crust

Preheat the oven to 425 degrees

  • Cook ramen noodles according to directions on package. Drain, rinse, and set aside in a warm place.
  • In a large pot, heat olive oil over medium-high heat. Add garlic and red pepper flakes and cook, stirring occasionally for one minute.
  • Remove from heat, add cooked ramen noodles, Parmesan, and oregano. Toss until well combined.
  • Butter a 10-inch pan, depending on how thick you want your crust use a pan with higher sides. I used a springform pan so I could remove the sides to cut. An iron skillet is excellent also. Transfer noodle mixture to the pan and spread evenly.
  • Whisk eggs and season with salt and pepper. Pour mixture over noodles.
  • Place noodles in the oven and bake for about five minutes. If you want a “crunchier” crust bake another 3-4 minutes.
  • Season ricotta with salt and pepper.
  • Remove noodles from oven. Spread ricotta mixture evenly over the noodle crust. Sprinkle mozzarella cheese on top of the ricotta. Top with favorite pizza toppings and return pan to oven.
  • Continue to cook for 10 to 15 minutes, or until cheese is melted and bubbly.
  • Remove pan from the oven. Let cool for about ten minutes. Cut pizza into wedges and serve.

Another tip I would like to add is that I added a beaten egg to my ricotta and mixed well. I do this when I make my lasagna, it makes the ricotta lighter and fluffier and spreads like a dream. Also I like garlic so I add a 1/2 teaspoon of garlic powder. Add any spice you like, its your pizza!
