Coconut Shrimp Recipe air fryer style

First of all if you love shrimp as I do, you will love this simple yet so delicious dish!! Because this coconut shrimp recipe, air fryer style way to prepare is such a time saver and oh so easy.

Besides that if you like to get the family involved in helping you, especially the little ones. They will enjoy being your little helpers with the dipping and rolling part of getting this into the air fryer!! And if they haven’t helped you get dinner ready before this might be just the perfect time to let them in on the action. Especially if you like to enjoy a glass of wine while in the kitchen. I do and paired this with the Chenin Blanc Viognier one of my favorite whites.

Coconut shrimp recipe, air fryer style ingredients

For the shrimp:

  • 1 1/2 pounds jumbo shrimp
  • 1/2 cup of cornstarch
  • 2/3 cup coconut milk (scrape the cream off the top of the can of milk, to use in dipping sauce)
  • 2 Tablespoons of honey
  • 1 cup of unsweetened shredded coconut
  • 3/4 cup of panko bread crumbs

For the dipping sauce:

  • 1/3 cup of the coconut milk cream (you saved from above)
  • 1/3 cup of toasted coconut vanilla Greek yogurt
  • 1/4 cup of crushed pineapple drained
  • Salt and Pepper to taste

Coconut shrimp recipe directions

  1. Remove the shell from the shrimp (if the shell is on), leaving the tail, if desired.
  2. Place cornstarch in a gallon-size baggie and add the shrimp. Shake to coat.
  3. In a medium bowl, whisk together the coconut milk and honey.
  4. In a  separate medium bowl combine together the coconut flakes and panko.
  5. Remove shrimp from bag, gently knocking off any excess cornstarch. Dunk shrimp in the liquid mixture and then dip into the coconut mixture. (You may have to press loose coconut and panko gently onto the shrimp)
  6. Then transfer the coated shrimp to the basket of your air fryer. Heat your fryer up to 350 degrees F and cook for about 8 minutes, flipping shrimp once. Cook until the coconut is golden brown and the shrimp are cooked through.
  7. Meanwhile, get the sauce ready. In a medium bowl, combine coconut cream, yogurt, pineapple, salt and pepper.coconut shrimp recipe air fryer style

Clearly if you and your family loves shrimp they will definitely enjoy this dish. If you do not currently own an air fryer get one, because it will cook these shrimp fast. It is the star of this show by browning and crisping up the coconut shrimp perfectly.  Please just remember to turn over the shrimp once it is browned on top, 5 to 6 minutes in.
